INGREDIENTS FOR 4 PEOPLE

Ingredients

  • 1 lb. lean ground turkey (protein of choice)
  • 1 box of linguine or fettuccine (pasta of choice)
  • 1 lb. lean ground turkey (protein of choice)
  • 1 box of linguine or fettuccine (pasta of choice)
  • 28oz. marinara sauce
  • 1 can fire roasted diced tomatoes
  • 3 tbsp. Mascarpone
  • Bunch of Fresh basil
  • 2 Cloves of garlic
  • Kosher Salt
  • Black pepper
  • Crushed red pepper flakes
  • Extra Virgin Olive Oil (EVOO)

Directions

In a large pot bring 8 quartz of water to a boil (add a 1/2 tbsp. of EVOO to the water), once water comes to a boil add a liberal handful of kosher salt to the water and then add pasta; cooking for 8 minutes until al dente (do not rinse pasta). Reserve 1/2 cup of pasta water and strain (to stop cooking process) and set noodles aside. In a medium saucepan cook ground meat with a little water and cooking oil (like Sunflower or Safflower oil - cooks at very high temps and is a healthier alternative). Once brown add noted seasonings.

  4. Once brown add noted seasonings.
  5. Add in diced tomatoes, garlic, and seasonings to cooked ground meat
  6. Next, add marinara as needed to cover the meat and mix in mascarpone for texture
  7. Add noodles to the sauce torn pieces of fresh basil leaves and EVOO drizzle.
